Aiming with a mouse is so much more precise, while on console, since you’re using a controller with imprecise analog sticks, you need aim assist, which usually doesn’t help you much anyway. The one genre where playing with a controller gives you a massive disadvantage is shooters, especially first-person shooter. I do think that Hollow Knight is better played with a controller, as most platformers (2D and 3D) are, but some games are objectively better with a mouse and keyboard.
If you've got a good PC with a nice monitor or TV connected to it, I'd choose the PC version. If you value playing on the go, the Switch version is fine.
The Switch Pro controller is really good as well, though, but quite expensive for ~60€ where I live. The XBOX One controller (basically the standard for PC) is great, while the regular Switch controller is much worse. So I'd say it also depends on what kind of controllers you own for which platform – or how much money you're willing to spend. You'll also definitely want a good controller for this game. Although my girlfriend only has a really bad TV for her Switch. I feel all dialogue boxes are harder to read and even hurt my eyes a little. Due to Hollow Knight's art style the game still looks amazing on the Switch, but if you know the PC version, the difference is noticeable.
The PC version can be experienced in 1080p or maybe even higher. The Switch version has a lower resolution, though.
